This presentation introduces an example of food metabolomics using single quadrupole LC-MS. Although triple-quadrupole LC-MS/MS is normally used for targeted metabolomics, it was found that single-quadrupole LC-MS also has sufficient potential for targeted metabolomics. Compared to triple-quadrupole LC-MS, single-quadrupole LC-MS is cheaper and easier to operate, making it easier for many people, including those who have no experience of mass spectrometry, to use. The spread of food metabolomics using single quadrupole LC-MS is expected to lead to further development of technologies and products in the food industry.
