イメージングMSによるドライフルーツ(あんぽ柿)の栄養素局在解析

Fukushima Prefecture, as an agricultural prefecture, grows a large number of agricultural products, and is one of the top producers of fruits in Japan. However, the reputational damage caused by the earthquake and nuclear accident still remains. High-quality fruits and processed fruit products could not be labeled as "produced in Fukushima Prefecture," but are now being distributed at low prices as "domestic products". In order to show that a product is of high quality, the results of food inspections are expressed in numerical values and spectra, which requires specialized knowledge and makes it difficult to convey the efforts of the producer (use of pesticides below the regulated value and commitment to quality) to the general consumer. In particular, dried persimmons (anpo-kaki) produced in Fukushima are said to not only taste good, but also maintain good daily physical condition, but scientific evidence is lacking. In this study, we will use imaging mass spectrometry technology to visualize the localization of (1) vitamin groups (vitamins A1, B1, and B6) to anpo-kaki, a Fukushima specialty, and scientifically show the effects on taste and health.
