Volatile profiling of rosaceous fruits: in search for flavorful fruits

Flavor is a key factor in determining the character and value of a fruit. In order to produce flavorful fruits in the aspect of breeding or cultivation technique, comprehensive analyses of aroma components play an important role. We have conducted volatile profiling of four Rosaceae fruits to identify the key aroma components that give the typical odor of the cultivar. Several flavors have been detected as key aroma components in the newly bred cultivars that give them their own odor characteristics. We would like to share our analytical examples of volatile profiling related with sensory analysis.
