Proteomic and Metabolomic Profiling of Taiwanese Quinoa for Functional Components

Growing health awareness driven by epidemics, social changes, and an aging population has boosted the functional food industry. Taiwanese quinoa (</I> Koidz) is a native superfood rich in nutrients that vary in color and composition. This study employs proteomics and metabolomics to explore its functional components and biological pathways, aiding future breeding efforts. Using SWATH-MS proteomics, 508 proteins were identified, with 174 quantified, including BSA. Chemometric analysis distinguished different quinoa samples, identifying 79 key proteins. Phytocyanin domain-containing and chitin-binding type-1 domain-containing proteins were markers regulating flavonoids, phenylpropanoids, and plant defense. Metabolomics analysis, based on IFSDDA-MS, effectively differentiated samples. In positive and negative modes, 40 and 35 metabolites were annotated, respectively. Key compounds like ferulic acid, phenylacetaldehyde, L-DOPA, acetaminophen, proline, and adenine showed significant differences in red quinoa. This multi-omics approach provides a scientific basis for Taiwanese quinoa breeding, enhancing its economic value and market competitiveness.
