リンゴ果実のみつ症発達と関連した果肉組織可溶性炭水化物分布のMALDI-TOF MS imagingによる可視化

Warercore in apple fruits is a physiological disorder where a part of the fruit flesh becomes water logged. It is well-known that watercore fruits increases both palatability of consumers and price of the fruits. However it can be a cause of rot during storage of the fruits. Thus, watercore is said to be an important feature economically. It has been pointed out that development of watercore related to sorbitol accumulation in fruits, but dynamics of soluble carbohydrate distribution in apple fruits during maturation are not fully clarified yet. In this study, we tried to visualize carbohydrate distribution in apple fruit flesh associated with watercore development utilizing MALDI-TOF MS imaging (MSI) corrected by the results from HPLC (Hattori et al., 2010). As a result, sorbitol-accumulated area in the fruit flesh almost overlapped with that of watercore-developed area.
