HS-GC-MSによるトリアシルグリセロールの劣化挙動解明

In our research, we analyzed the gases generated by the deterioration of high-purity triolein using HS-GC-MS. As deterioration progressed, shorter-chain aldehydes such as heptanal and hexanal, which are not generated from the known pathway, were observed. In this study, nonanal was deteriorated to clarify these phenomena, and the degraded gases were analyzed over time.
Nonanal deteriorated for 1 hour were transferred to vials and analyzed by purge-trap HS-GC-MS. As a result, octanal, heptanal, and hexanal as aldehydes, formates such as octyl formate, and alcohols such as octyl alcohol were observed. Carboxylic acids such as Nonanoic acid was also found. From the above, it is considered that the carbon reducing reaction shown in Figure 1 is taking place. In other words, aldehydes are converted to formates which have same carbon number by Baeyer-Villiger oxidation, which reacts with peroxides, and these formates are hydrolyzed and converted into alcohols with one less carbon number. The alcohol is then oxidized by oxygen to an aldehyde with one less carbon than the original aldehyde. It is thought that the repetition of this reaction gradually produces a low-carbon component through oxidation.
