UPLC/Q-Tof MSを用いた植物油の加熱処理における劣化機構解析

This study’s aim is elucidating degradation mechanism of heat –treated food oil. Control and heat-treated oil was analyzed with UPLC/Q-Tof and processing by OPLS-DA model, then many components with significant difference were found and identified their conformations.
