13C-metabolic flux analysis was performed using GC-MS to measure the metabolic state of budding yeast in a low-temperature environment. Yeast cells were cultured at 10, 13, 15, 30℃ to examine the metabolic changes with the temperature conditions. The specific growth rate, glucose uptake rate and ethanol secretion rate of yeast cultured at 10℃ were notably reduced compared to those at 30℃, 13C-metabolic flux analysis at 10℃ showed the rewiring of central carbon metabolism.
