Study of Oxidation Reactions of a Scent Compound "Isoeugenol" Originating from Plants using ESI MS

Oxidation reaction of a scent compound isoeugenol was examined by using electrospray ionization (ESI) and collision-induced dissociation (CID) experiments. Isoeugenol was treated with UV light irradiation in a H2O2 solution. After the irradiation for 2hours, ESI mass spectrum of the treated analyte showed oxidized analyte ions [IEN+nO+H]+ (n=1~3). These oxidized products were analyzed by CID experiments, and the structure and oxidation processes were examined on the basis of the CID data.
