Chiral Discrimination of Modified β(2→1) Fructooligosaccharide toward Ammonium Ion of Chiral Amino Acid Esters

Modified fructooligosaccharides were prepared and their chiral discrimination ability toward ammonium ion of chiral amino acid esters was examined using fast atom bombardment mass spectrometry coupling with the enantiomer labeled guest method. Their modified frucutooligosaccharides showed chiral discrimination toward several chiral guests.
