Identification of VOCs in Food by using Deconvolution Software for GC-TOFMS

In recent years, analysis techniques of compounds that contribute to the smell and taste of foodstuff and their ingredients such as plants are making remarkable progress. In order to find the source and generation route of scent components, Gas Chromatography Mass Spectrometry is indispensable technique to identify compounds. In particular, there are wide variety of sampling systems and mass-spectrometer. Especially for mass-spectrometry, not only qualitative/quantitative analysis by single quadrupole MS but also trace quantification using MS/MS method and compound identification using high resolution accurate mass-spectrometer have been performed. However multi-component identification using a high-speed Time-Of-Flight Mass Spectrometer is getting worldwide attention for analysis of scent components at present. In this poster, it is discussed about why high-speed TOFMS is used and explained their principles, advantages and unique compound identification methods. Furthermore, the deconvoltion software is used in order to analyze a large number of complex compounds acquired by high concentration and high separation mode. Additionally they are introduced sampling method for concentrating volatile components as another important technique for further improving the performance of GC-TOFMS.
