Differentiation of Cinnamon Bark samples with HS-SPME-GC-TOFMS

Cinnamon Bark consists of very complex volatile compounds and monitoring these compounds can help differentiate samples, provide quality control information. In this study, we aim to differentiate Cinnamon Bark varieties and understand differences by determining individual analyte differences. However, Cinnamon Bark consists of very complex volatile compounds, so it is difficult to analyze by conventional GCMS. In this instances, GC-TOFMS is very can be very useful because it provides non-targeted chemical profiles of these samples. The experiments demonstrate the capability to differentiation of Cinnamon Bark samples.
