食品成分の吸収とMS分析
Mass spectrometry (MS) technique is a promising analytical tool allowing for high-sensitive and high-selective detection of food analytes, such as proteins, peptides, lipids, and metabolites. In our research, we aimed to apply MSs with the aid of derivatization and imaging techniques for evaluating intestinal absorption and metabolism of administered bioactive food compounds, since intestine is the main organ contributing to bioavailability of compounds.
