収穫時期別アスパラガスの機能性成分群の視覚的考察
The harvest period of asparagus (Asparagus officinalis) can alter the composition of nutrients. We visually determined whether the amounts of asparaptine and rutin at asparagus sample vary by a harvest period in spring (from April to May) and summer (from June to August), using matrix-assisted laser desorption/ionization (MALDI) mass spectrometry (MS) imaging. Asparaptine was localized around vascular bundles and it was increasing maximum in summer compared with spring. Rutin was localized at epidermis and it was concentrated in spring. Multiple-nutrition imaging using MALDI-MSI has great potential for enhancing commodity value and for visually investigating the effects of harvest period.
