Odor analysis for discrimination of coffee beans in different origins by Thermal-Disorption GCxGC-TOFMS coupled with multivariate analysis and identification of unknown components by using High-resolution TOFMS

Short Abstract: Coffee beans obtained from different regions and brands were profiled using GCxGC-TOFMS coupled with multivariate data analysis. The relative peak areas of the different compounds identified by deconvolution were used for multivariate data analysis. Additional collection of HR-TOFMS data allowed for identification of unknown components with mass accuracy of ≤1 ppm. The result was suggested these techniques were useful for comprehensive profiling that discriminates minor differences for characterization between similar samples.
