High-throughput and sensitive analysis of 3-chloro-1,2-propanediol fatty acid esters (3-MCPDEs) in edible oils by using supercritical fluid chromatography/tandem mass spectrometry

The oil refining process was introduced to improve quality. 3-chloropropane-1,2-diol fatty acid esters (3-MCPDEs) are known as new process contaminants in refined oils and fats. Several methods are conducted for determination of 3-MCPDEs in oil and fats. However, there are a number of challenges to getting consistent results with these methods. In this study, supercritical fluid chromatography coupled with triple quadrupole mass spectrometry (SFC/QqQ MS) was used for the analysis of 3-MCPDEs. All analytes were successfully separated within 9 min. The system was precise and sensitive, with a limit of detection less than 63 μg/kg. The developed method has been successfully applied to determine these compounds in edible oil samples.
