Non-target analysis of foods by Pyrolysis GCxGC-TOFMS: Comparison of coffee beans between Different Origines.

The deceptive labeling of origins become one of the problems of foods, methods to identify origins of foods are required. This study shows the possibility to identify the origins of foods by using Pyrolysis GCxGC-TOFMS and Multivariate analysis. We applied this methodology to the identification of origins of coffee beans. Principal component analysis, one of the multivariate analyses, can classify unknown sample (blend beans) by using well-known samples (straight beans) as references. This method can be applied to different kinds of foods.
