DIUTHAME SALDI IMS を用いた花色素の構造解析
Anthocyanin in petals vary in color depending on the number of hydroxyl groups in the aglycone. Therefore, we assumed that the number of dehydrated fragments and the number of hydroxyl groups in the pigment could be correlated by MSn, and that we could analyze the structure of the flower pigment. Here using desorption ionization using through hole alumina membrane surface-assisted laser desorption/ionization imaging mass spectrometry (DIUTHAME SALDI IMS), we revealed that the pigment-derived material was really in the vacuole. And we showed that the components of flower pigment can be analyzed by clarifying the number of hydroxyl groups.
