Visualization of asparaptine in asparagus (Asparagus officinalis) using MALDI-IMS

Asparaptine which is an inhibitor of angiotensin-converting enzyme (ACE) is a newly discovered compound in asparagus by Nakabayashi et al.. This compound is a conjugate of arginine and asparagusic acid, and it is suggested that this compound is effective in preventing high blood pressure. For this reason, asparaptine has become the compound to attract remarkable attention in recent years and it was necessary to obtain more information in detail. However, no studies have been made to know the localization of asparaptine in asparagus. Therefore, in this study the localization of asparaptine in asparagus was clarified using matrix-assisted laser desorption/ionization imaging mass spectrometry (MALDI-IMS) which is the novel method to visualize molecules.
